One of the staples of the "Favorite" menu at Cactus Taqueria at 5642 College Ave: the echilada.

The corn torilla-wrapped cheese is pretty standard fare. At this family-friendly Mexican establishment, all the flavor is in the salsa.

This enchilada got slathered in sweet and spicy pineapple, a bright counterpoint on the outside to the savory contents on the inside.
